In her opening day talk at lunch!, Lucy Chapman, strategic insight director at Kantar WorldPanel, will discuss how recessionary behaviours impact the out of home lunch occasion and how food-to-go destinations can protect against the impact of external forces (12.15pm, 19 September).
What do you think is the key for operators to successfully compete against their competitors?
Food-to-go has always been about practicality, but appealing to more than just the convenience needs of consumers, whether through offering healthier options, new flavours, or enhancing their experience is key to differentiation in a highly competitive market.
What do you see as key trends for food-to-go in the coming year?
With a lot of uncertainty in the wider world, we have started to see consumers display more recessionary type behaviours, including an increase in packed lunches. So value for money is likely to be increasingly important.
What about the next three to five years?
For a long time, enjoyment and convenience have been key motivators in the food-to-go market, but we are starting to see the wider trends around health playing into out of home behaviours.
What’s the most rewarding aspect of your job?
Getting to work with great clients and colleagues, who are truly passionate about the out of home market, and who want to truly understand how consumers engage with the market.
