What has been your business highlight in the last 12 months
Launching our first location in Spitalfields successfully! Despite operating in one of the most challenging periods for our industry.
What do you think are the main challenges ahead?
Without a doubt food cost! They keep rising and if you’re not able to control them, your restaurant will struggle to survive!
Really looking forward to introducing The Salad Project! We’re new but we’re ambitious and we’re really trying to make an impact!
What do you see as the key food to go trends for 2022 and beyond?
At The Salad Project, we’re convinced people will continue to turn to healthy quality options. Especially given the sanitary crisis we have just been on! This is so exciting for us.
What’s the most rewarding aspect of your job?
Having a positive impact on someone’s day, every day. Whether that’s taste, balance, fitness, service etc.
What are you looking forward to most about visiting lunch! 2022?
Connecting with some many players in our awesome industry!
